Black Box Culinary Challenge and Award
12 great teams participated on the 2006 Black Box Culinary Challenge at the HITDC, VTC in Pokfulam. They battled for the top awards and every one worked extremely hard. The standard was extremely high in cooking and in the table display category and all team put up a great show and created great food and the ultimate dining experience for over 130 invited guests.
But on the end of the day only one team can claim the top award and this year it went to the Disney Hollywood Hotel. They clinched the best first course and the best Main course award as well. The winning team will represent Hong Kong to compete with 26 other Countries at the Global Pacific regional final to be held in Dubai in 2008.
The first runner up was the Ritz Carlton which also won the best dessert award. Second runner up was the Royal Garden Hotel which had also a great main course.
The best table display went to the Hong Kong Convention and Exhibition Centre, which did a very refreshing and clean display with flowers, tulips in particular.
The Judges had a hard time to make their final decision and they were delighted at the high standard, quality and professionalism which was represented here and which Hong Kong is know for world wide.
The other participating teams were, The Le Meridien Cyberport, The Jockey Club House in Shatin and the Jockey Club House in Happy Valley, further we had the Intercontinental Grand Stanford, the Marco Polo Hong Kong Hotel, The Hospitality Industry Training and Development Center (HITDC) , the Cathay Pacific Catering Services (HK) and the Disneyland Hotel.
The 2-day competition was organized by the Hong Kong Chefs Association in collaboration with Meat & Livestock Australia (MLA) and the Hospitality Industry Training and Development Centre (HITDC) at the Vocational Training Council (VTC) and took place on October 4 – 5. It is a prestigious contest among professional chefs and food establishments and endorsed by the World Association of Chef's Society (WACS).
Participating teams were given a “Black Box”, a mystery box containing different food items, for creation of a menu on the first day. The teams then returned to the competition venue on the following day to prepare and present their dishes. They were appraised according to the innovation, presentation and hygiene throughout the course of creating, preparing and presenting their dishes.
The competition aims at encouraging young professionals with a few years of kitchen experience to work and compete in a team environment to display their skills and talents in a “hands-on” outside catering situation
