Dragon Boat Races Chefs Team --We need Paddlers!
The Annual Dragon Boat Race is going to be held at Stanley Main Beach on 19 June 2007 (Tuesday).
This is the first time that we the Hong Kong Chefs Association will take part in it, So we need manpower and sponsors.
This is a great change to experience the Asian culture from a very different point and it is a great way to stay in shape
The entry package include 10-hours practice fee & equipment rental, plus 20 souvenir T-shirts, one 20-litre Dry Bag.
Dragon boating is now regarded as one of the fastest growing water sports in the world. It is good for physical health and the mind and is a good means of building up team spirit. It is obviously a precious corporate social and sporting activity for camaraderie and friend ship.
The crew on each boat is limited to 20, including 18 rowers, one steersman and a drummer. And the average weight of the crew must not exceed 200 pounds.
Each boat is limited to 20 people (not less than 12 !) including the helmsman & drummer

WA Oceanafest-Rest. of Champions-Salon Olympia Culinaire 2007
I just returned from Western Australia where I was invited by the Australian Culinary Federation of Western Australia (ACFWA) to be a part of the international Judging panel for the Restaurant of Champions & Salon Olympia Culinaire 2007at the WA Oceanafest in Perth.
The aim of this competition was to assess the culinary skills and abilities of chefs, cooks, pastry chefs, apprentices and so on. The Judging criteria were based entirely on rules and regulation specified by the World Association of Chefs Societies (WACS) who also endorsed the event.
Therefore this competition was of highest international standard and is the premier culinary competition in Australia.
For the Restaurant of Champions, 7 teams were battling for the top place over 3 days.
The team was made up by one Team captain, and 4 members. They could choose their own menu, which consisted of an entrée (hot/cold or both), a main course with beef or lamb and a dessert.
86 portion had to be prepared; four for the judges and 80 for paying guests who enjoyed this extra vaganza for 3 days. 2 additional plates were pulled by the judges during the service to insure that the same quality was maintained trough out the entire event.
There were 3 superior kitchen set up according to the international standard of competition, first class equipment was provided and kitchens had ample space to work in. The chef had 4 hours time to come up with this 3 course lunch and they were requested to serve the judges the meals with only 10 minutes interval.
We the judges; Eric Teo(President of the Singapore Chefs association), Ingo Schwarze (Master Patissier Dip.T) from Adelaide, Gary Farrell ( Australian winner of many culinary competition) from Melbourne, our Chief judge Michael Strautmanis ( a legend in his own field and life member of the Australian Culinary Federation) and my self had the task to check the contestant, their mis en place , menus , recipes, hygiene and sanitation, working methods and right applications for the right job, time and then finally the presentation, combination , texture and taste.
It was a fantastic 3 days and the winning team was the Singapore Chefs Association Culinary Team (gold and over all winning trophy), with a lead over the National ACF Culinary Team which came in second (gold) and the ACF regional team from Canberra came in third with a Silver-medal.
The team from Canberra was a youth team and they competed on international standard grounds, they did an out standing job, and they will be a force to be recon with in near future.
The over all standard was high and we were able to eat very well in these three days.
The winning menu from the Singapore Team was:
Confit of Salmon in Lime Oil, Salmon Belly Tartare,
Modern Niçoise Salad with Lemon Scented Olive oil
Green Gazpacho Espuma and Balsamic Reduction

Roasted Herb Crusted Lamb Rump with Creamy Mushroom Ragout,
Braised Lamb Neck with Butternut Puree and Caramelized Apple,
Served in Lightly Soured Lamb Jus

Passion Fruit Chiboust Gratin with Warm Chocolate Pudding,
Fruit compote and Red Wine Plum Sauce
Overall they had over 150 entrees in other classes. It was a great show and a special credit goes to Patrick O’ Brien, President of the Australian Culinary Federation WA (ACFWA), Martin Carlin and Beat Tobler who single handed organized and executed the entire event with seamless perfection.
And on top of it were excellent hosts and made us feel very welcome in this beautiful place called Perth.WA.
It was a pleasure to been there and job very well done and we will work hard here in Hong Kong, so that we are able to send a culinary team the Oceanafest 2009.

It is time to check in on our New Year resolution, and do something for all your senses, so we invite you for a Saturday morning hike to the great Buddha on Lantau Island followed by lunch at the Olea restaurant at the Citygate Novotel in Tung Chung.
The leisure and easy hike will take about 3 hours both ways and we will be back for a great, long lunch and afternoon at 1 pm. (changing, shower facilities and towels are available)

The price is only HK$ 150.- every thing inclusive for the folks who do the hike and HK$ 180.- for those ones who will join us for lunch only.
