The funeral parlor will be open from Monday 16th March 5pm to 10:30 pm
A Service of Thanksgiving for the Life of Hans Rudi Nussbaumer will be held at
8:30 am on Tuesday 17th March, 2009
Location: G/F Sai Sing Funeral Parlor in Hung Hom
After the service there will be a bus leaving at 10 am for those who wish to continue on the crematorium and cemetery at Diamond Hill.
A Charity Trust has been set up for a continued education support for Hans Rudi’s daughter Larissa. Please don’t send flowers, in lieu of flowers, please donate towards this trust.

Ham slicing competition

Dear Culinary Friends,
The Spanish Institute for Foreign Trade (ICEX) and the Spanish Trade Commission would like to invite you to participate in the “ HAM SLICING COMPETITION” that will take place on May 7th at 11:30am during HOFEX 2009 (The Asian International Exhibition of Food & Drink, Hotel, Restaurant & Foodservice Equipment, Supplies & Services) at Hall 3, Hong Kong Convention & Exhibition Center.
The event is the first of its kind in Hong Kong and is open to all Hong Kong/Macao professionals with ham slicing experience. Participants should be representing their restaurant and/or hotel. The judge panel will evaluate the following:

Slicing
style, speed and cleanliness.

Weight,
size and quality of slices.
· Presentation.
Participation is free of charge and the winner will be awarded with a full set of professional ham slicing utensils, a diploma and cash prize.
The second and third runner ups will be awarded with a
diploma and cash prize as well.

Guest Chef or short term position sought

HK hosts Canberra Southern Cross Club Graduate Cooks Award Winner

Each year the Canberra Southern Cross Club awards a young chef with a trip to Hong Kong for culinary education and enlightenment. This year’s talented young recipient was David Lockwood of Canberra. David spent the week interning in many of Hong Kong’s prestigious food and beverage establishments, and of course getting the plenty of cultural experience as well.
One of the traditions the HKCA has begun for this young guest chef is a Saturday morning tour of the Aberdeen wholesale fish market followed by a dim sum brunch in the nearby retail wet market. This year was no exception, and we had a great time showing David around.
David was especially lucky this year, as his visit just happened to coincide with the AGM. And so he was an honored guest at the event where he seemed to get along quite nicely networking with the many attendees from the HKYCC.
The HKCA hosts this award winner annually along with many other visiting chefs and trainees. If you want to get involved with this or other guest hosting events in the future please let us know.
