Fund Raising Dinner

The HKCA will host a Fund Raising Dinner in memory of our friend, colleague, and long standing committee member; Hans Rudi Nussbaumer.

The dinner will be held at his last place of employment, the Hong Kong Regal Airport Hotel on Friday the 17th  April 2009. This remembrance Dinner will be cooked for by the HKCA National Team, Committee Members, and Friends. 

Location: Regal Airport Hotel Ballroom

Date and Time: Friday, 17th April 2009 7:30 Cocktail 8:15 Dinner, an auction will be held towards the end of the dinner.

Multiple course Menu to be advised.

Price HK$ 650.- pp ( all the proceedings will go the Education fund of Larissa Nussbaumer).

Everyone is welcome. And we are counting on about 300 people to join this dinner, so please make your bookings on time!

Mothers Choice needs your support

 

March 2009

Dear Chefs and Bakers,
 
Greetings. For this year's Mother's Choice Gala Dinner and during such a difficult economic environment, we would like to ensure that the funds we raise from the event should go directly to those most in need, rather than paying for the usual ballroom decorations. To help us make this a reality, we are asking for your help, for a community-wide show of support for one of Hong Kong's long-standing charities of choice.
 
We are requesting you and other Pastry Chefs and Bakers in the community to donate one cake to serve as a centrepiece for each of the tables for the Gala Dinner. In keeping with the theme, the cake can be an artistic representation of "Fairytales", either Western or Asian-inspired. In addition to serving as a decorative function, the beautiful cakes will then be auctioned off to the table hosts and guests attending the event.
 
Specifications of the cakes are as follows:


     Theme:                "Fairy Tales"
     Size:                  16-inch diameter (square or round) cake
     Height:                from 8 to 9 inches high
     Number of Cakes:      47
     Logistics:              if possible the cakes are to be delivered to the JW  Marriott                                  

                            Hotel Hong Kong on the day of the event (between 3-4 pm 3-4 pm 3-4 pm

                            on Saturday, 9th May 2009) or kindly let us know if we can

                            help you pick it up in the morning of the event to allow

                            enough time for us to decorate the table with the cakes
 
We would appreciate your advice letting us know if you can participate by Tuesday, 31 March, March 2009.
 
Without the generosity and support of the community to Mother's Choice we would not be able to effectively touch, shape and change the thousands of lives over the last 22 years.

The Western Cuisine Trade Test System

The Western Cuisine Trade Test System at the Hospitality Industry Training and Development Centre

The trade test was developed by the Hospitality Industry Training and Development Centre (HITDC) in collaboration with the German Chamber of Industry and Commerce (IHK), Koblenz Germany. The trade test system is recognized by all the European Union countries. It enables chefs specializing in Western cuisine to establish their professional credentials in Hong Kong and overseas

It comprises of:

Certified Cook:

Minimum requirements - six years relevant working experience or one year full-time certificate (HITDC or equivalent course with a minimum of 1200 hours in food preparation training) plus a minimum of three years relevant working experience; must complete relevant certificate in hygiene and safety (Basic Food Hygiene Certificate for Hygiene Supervisors)

Trainer Chef:

Minimum requirements - Certified Cook Qualification and a minimum 24 years of age

Master Chef:

Minimum requirements - Trainer Chef Qualification and relevant certificate in hygiene and safety (Basic Food Hygiene Certificate for Hygiene Managers)

The HITDC invites Master Chef Trade Test application now. The Preparatory Course will commence in September 2009 and the deadline for application is 25 May 2009

 

The Western Cuisine Trade Test System

for Master Chef Level

 Admission Requirement:

(a) Trainer Chef qualification

 

(b) Minimum 24 years of age

 

(c) Relevant certificate in hygiene and safety (Basic Food Hygiene Certificate for Hygiene Managers)

 

Preparatory Course for the trade test of Master Chef Level

Aim: The Course enables participants to:

(a) Be familiar with the training and the operation of the demonstration kitchen of the Hospitality Industry Training and Development Centre;

(b) Have a clear understanding of the requirements of the trade test (both written and practical tests), which includes the skills and knowledge of the following topics:

 

- Economic and Business Studies;

- Basic knowledge on Rights and Taxes;

- Business Organization and Management;

- Company Management and Control;

- Elementary Accounting and Finance;

- Human Resources Management;

- Information Management and Labour Law;

- Communication Management;

- Staff Management and Development;

- Planning and Organization;

- Food Costing, Purchasing and Maintenance;

- Convenience Food and Culinary Technology;

- Nutrition and Basic Knowledge on Health Consciousness;

- Hygiene and Ecology;

- Budgeting and Planning;

- Guest Relations;

- Product Marketing and Sales Techniques;

- Grooming and Appearance;

- Further Development and Lifelong Learning;

- Practical Demonstration and Workshop;

 

 Preparatory Course and Trade Test for Master Chef Level (HO-333):

 

The Preparatory Course for Master Chef Level will commence on 3 September 2009 and will continue until 24 June 2010.

The class will be held every Thursday from 8:30am to 6:30pm. The duration of the course is 396 hours

 

The Trade Test will take place in July 2010. It will consist of a 10.5-hour written test and a 12-hour practical trade test.

 

The course fee is HK$ 65,000.*

Dragon Boat races

 Dragon Boat Racers...

The Hong Kong Chefs Association Needs you......The 2009 Dragon Boat Festival will be held in Stanley on Thursday May 28th, 2009 (Tuen NG Festival) and the HKCA is now seeking 26 to 28 strong and fit people to crew our boat, below 190lb/86kg. No experience is required, though of course all previous team members are most welcome to return from the HKCA or the Young Chefs Association.

All that’s needed is a little commitment to attend all training sessions, and then of course the big event on May 28th, and a great deal of fun is promised, followed by the rich reward of some gourmet food and beverages on Walter Kern’s roof deck after the big event.

The training sessions will be held in the mornings at Stanley Main Beach on the following days:

Saturday: 11/4, 18/4, 25/4, 2/5, 9/5, 16/5
