HKCA Pre Christmas BBQ and Cruise



Dear Members and Friends,
The year is almost over and we would like to invite you for our Pre Christmas Cruise.
Jean Paul from Copacabana will lend us his Chinese Junk and Crew on Thursday December 13. We will board the boat close to the Aberdeen Boat Club, at 5:30 pm, after which we sail to Deepwater Bay, where the Anchor will be dropped.
We will then have a great Self Service BBQ with Salads and drinks, juices, wine and beer. The price is only HK$ 100.- every thing inclusive for Members and HK$ 150.- for Guests.
We will return to Aberdeen around 11 PM
For those who cant make it this early, or are in need to leave early there is a water taxi on hand to ferry people over if needed.

Hike to The Big Buddha, and Luncheon with Heinz Egli
T' was a beautiful day, Blue Sky, virtually no smog, when Heinz Egli took us for a sportive challenge yet again, hiking to the Big Buddha, with some great company! 18 Healthy and fit Chefs really showed their sportive side with a bunch of them even running up the mountain!
For a while the runners thought they lost someone, but he was just slowed down by the previous late nights liquid consumptions.
I have to admit despite my exercise I was the last to arrive at the Buddha and some of us took a comfortable bus back down to the Novotel Hotel for a superb lunch in Restaurant Olea
Ladies Only Gourmet Team for FHA Singapore April 2008
We like to send a gourmet team to the FHA Singapore in April 2008, and we want to give our Female Chefs a chance. That is right Ladies, it is your time to shine, some Male Chefs can still support and help from the back, but the drivers are the Ladies.
We are still looking for a few more talented Chefs and if you are keen please give Chef Mak a call @ 6175 8494. The team will be finalized by December 31.
Cooking for Life
Cooking for Life based in Hong Kong, is dedicated to bettering the lives of underprivileged children through education in cookery. Our mission is to provide these children access to take part in activities that are not normally available to them, and to afford them the chance to integrate and interact in new surroundings.
The vision for the program is that we will ultimately provide the participants the chance to take up employment in a major kitchen or send them to a World renowned hotel school, opportunities they would never have thought possible.
All of our children come from Hong Kong organizations dedicated to working with those from a range of underprivileged situations. We have been working with 7 organizations including Against Child Abuse, the Neighborhood Advice Action Council, Christian Action, the Hong Kong federation of youth groups, Medical Social Services, Hong Kong Children & youth services and the Boys and Girls Clubs Association.
CFL is a 36 session program where participants, aged between 10 and 18 will take part in a lessons being led by top chefs in restaurants and hotels around Hong Kong. The expertise of those with many years in the industry is being used to direct the program with the assistance of volunteers.
Beyond the kitchen, trips to markets, farms and restaurants helps develop a greater sense of belonging and provide more extraordinary experiences for the children.
CFL is a not-for-profit organization established and run by volunteers, and every dollar donated goes directly into the programs for the benefit of all of the 100 participants

Food Composition Database - Nutrition Labeling Scheme
Dear Chefs,
Thanks so much for being the "Supporting Organization" of our project about
setting up a food composition database for the upcoming nutrition labeling
scheme on prepackaged food in Hong Kong. We will include your association into
the related links page of our website. Besides, we will add your
associations food-related activities (already received in my personal email
account through your mailing list) into our webpage constantly. To avoid
missing any of your food-related activities, I would like to confirm if your
association is organizing only Western Cuisine Trade Test Applications as a
food-related activity in the coming 2 months.
Our website contains 2 parts: the publics and the members parts.
Advantages of being members:
EMembers have priority in participating in Database's seminars and workshops to
obtain the latest news of the Labelling Scheme on Nutrition Information.
EMembers can acquire the information of the latest food-related activities
organized by the supporting organizations of the Database.
EMembers can search and obtain reference nutrition information of their
targeted food ingredients simply via the web-based Database to create suitable
nutrition labels for their products.
EMembers can submit samples to the Database in order to reduce the production
cost resulted from the upcoming scheme. However, the Database's decision on
sample selection shall be final.
EFor promoting our members to the industry and the public, their company's
contact information and websites (in hyperlink format) will be exhibited in the
Database's webpage. Besides, the Database will provide its members an electronic
logo which could hyperlink back to the Database's website. Members can simply
post the logo on their websites for showing their member's identity to the
industry and the public.
On the other hand, the public can only access to the nutrition information of
anonymous food products instead of obtaining the reference nutrition
information of food ingredients. For details, please visit our webpage

Membership renewal
Dear Chefs, Friends and colleagues,
Once again a year is almost over and we may reflect on the past year, which was a good year for all of us in the industry, as business was great and most of the Hotels, Restaurant, Clubs, caterings and others F&B operations have show record figures for the third time in the row.
Also the Hong Kong Chefs association was busy and we had a record year in being active and involved in our culinary field . Hofex was a success, together with all the other smaller competition we had throughout this busy this year.
Our website has become as one of the best in Asia and our HKCA culinary team was representing us again and won the top prize on the international stage, in Bangkok, 07.
In 2008 we will participate in Singapore and Erfurt, Germany for the culinary Olympics for the first time in 12 years.
Of course we could all not do this without you, our valued member.
As we approaching the end of our year, we would like remind you that your annual fee for 2008 is due now. We will not raise the price, but we do hope that you all can pay up in time and we do not need to chaise too many members, as we are a non profit organization and everything we do is strictly on volunteer basis, you may like to know that your membership fee is nearly 50% of our annual budget. Very important indeed.
We would also like to bring to your attention that our annual AGM and dinner is set in late February 08 Venue will be announced shortly.
Before that we have a exiting BBQ Pre Christmas Boat trip on the 13 of December and we will also do our Swiss Chalet event again in mid January 08.
We are looking forward for you continuous support and we will see you all at the AGM and or in one of our events
