Chef Mirko Schwierz Demonstrates Modern German Cuisine

As part of its continuing effort to provide first class training for Hong Kong's hospitality industry and expand their knowledge of different regional and national cuisines, the Hospitality Industry Training and Development Centre (HITDC) of the Vocational Training Council (VTC) hosted a Western culinary demonstration by Chef Mirko Schierz on 12 May – 16 May 2006.

Chef Mirko demonstrated traditional German dishes with a modern flair.  The event was sponsored by the Central Marketing Agency (CMA) of Germany.

 

Among the dishes he created were Creamy Potato Soup with Bacon and Prunes, Pan-fried Fillet of Cod Fish with Creamy Sauerkraut served with Pumpkin Beetroot Strudel and Hamburg style Rote Grütze served with cream.  Other dishes included German Meat Balls in Light Caper Sauce served with Snow Peas and Chive Potatoes and a yummy dessert Oven-Baked Stuffed Apple with Marzipan and Marinated Raisins.

Chef Schwierz started his culinary career in the 90s and has worked in various hotels and restaurants in Germany and Scotland before becoming a chef consultant and conducting cooking demonstrations for CMA in various countries and cities such as Denmark, Shanghai, Tokyo and Paris. He is a specialist in German cuisine and prepares traditional dishes with a modern twist that feature a wide selection of authentic German ingredients and the freshest ingredients available.
